With experience gained in several Michelin-starred restaurants (such as Antoine, Restaurant David Toutain), as well as in one of the most prestigious wine cellars in Paris, his love for wine and gastronomy is at the heart of his commitment. Always attentive and respectful, Paul is meticulous in his work and has the ability to find the best food and wine pairings to enhance each dish. His expertise in the field of sommelier allows him to offer a rich, surprising, and diverse selection. With Paul, each bottle tells a story… let yourself be carried away!

Having honed his skills in France and abroad at renowned establishments (La Table des Frères Ibarboure, La Mare aux Oiseaux, Restaurant David Toutain, Le Crillon), Romain has gained a solid experience in the demanding world of haute cuisine. After many years behind the stoves, Romain has refined his technique and identity by focusing on the essentials. His passion for cuisine in harmony with the local terroir is reflected in every dish. It is this culinary philosophy rooted in nature that makes Romain’s dishes so authentic and memorable.

In 2020, Romain was awarded the Young Talent Gault & Millau Grant.
